Malcolm Lewis: Delicious French blue cheese. Great with dessert wines and port. A bit creamier than Stilton and not as pungent. A bit salty so nice to cut it with some apple.

Malcolm Lewis: Aged Gouda-style cheese. Salty, crunchy, nutty, slightly sharp flavor. Similar to Parmesan. Delicious! We get ours from Whole Foods Market.

Hard to find a website for this little-known cheese. Doesn't even get a mention on Wikipedia!

Malcolm Lewis: The King of Cheeses and rightly so. Serve at room temperature with a glass of port. Always makes me think of Christmas, but this decadent combo should be enjoyed year-round.
