Malcolm Lewis: Delicious French blue cheese. Great with dessert wines and port. A bit creamier than Stilton and not as pungent. A bit salty so nice to cut it with some apple.

Malcolm Lewis: Aged Gouda-style cheese. Salty, crunchy, nutty, slightly sharp flavor. Similar to Parmesan. Delicious! We get ours from Whole Foods Market.

Hard to find a website for this little-known cheese. Doesn't even get a mention on Wikipedia!
