This is a really easy and really wonderful cheesecake. The ricotta makes it lighter than an normal 'heavy' cheesecake and the honey and orange zest flavor really pulls through. I can't stress enough the importance of letting it chill in the refrigerator for at least 8 hours and even better 24 hours. The flavors really start to strengthen. I served it with berries after a wonderful Spring dinner. It was great! Perfect for guests.
