Carol Lewis: Not sure why this doesn't get very good reviews on Epicurious. We really liked it! I made a drizzle to go on top made of sour cream, avocado, cilantro and a small bit of ranch dressing. I jazzed up the squash with some cumin & coriander. I only used three tortillas. It was very easy to cut into portions - I thought it would break apart. Very good - we will have this again.
