For a week night meal - I'd say "I thought it was Fablistic!" Next time I will increase the fennel seeds and toast them in a dry pan before using them. This could be served with Chicken, Shrimp, Steak or even more veggies and no meat at all! I sort of wanted a little more tang to it. I may try a balsamic reduction to drizzle on top or just use balsamic instead of the red wine vinegar and increase the quantity.
